I hope that you all had a fabulous Christmas. We had a great time with family and are still trying to recover. I've decided to take a few extra days off this week to spend time with my family.
Yesterday something crazy happened to me and I decided to make a really yummy dinner, so I thought I'd share a few of our favorite recipes with you!
First up "Funeral Potatoes"
I'm pretty sure the nickname "Funeral Potatoes" is a Utah thing because these potatoes always end up at funeral luncheons.
Anyways here is the recipe I like to use!
24-30oz frozen shredded has brown potatoes (mix while frozen)
2 cans cream of chicken soup
1 pint sour cream
1 cube margarine
2 cups grated cheese
Mix those five ingredients together in a large mixing bowl. Sprinkle 1 cup corn flakes on top. Bake 350* for 1 hour.
Looks yummy! I'm pretty excited because my daughter had bought me the magazine with your mom's quilt in it and it is here (in TX) waiting for me! I just remembered, and she's in her craft room rummaging around looking for it!! Happy New Year!! ~karen
yum, looks good! - my SIL makes these with the cubed frozen hash browns (the kind with onions and peppers), and plain potato chips crumbled on the top, yum! I think they'd be good with french fried onions on top too!
They aren't called funeral potatoes in CA, but they still wind up at all of the church dinners/potlucks and are soo good. Except my mom's recipe calls for crushing the cornflakes and mixing them in a little melted butter.. makes the most yummy crust!
We call them Potatoes Deluxe. I have had that recipe since home ec class in the 7th grade. Around 79-80 ish. Love those taters!! I don't put any toppings on ours.
Like I said on FB, I call them Party Potatoes and I don't put anything on top except maybe extra cheese... Got my recipe at Church too! They are good with leftover baked or boiled potatoes.
Thaw the potatoes first or mix while frozen?
