Every once in a while I cook something yummy and each time that I share the pictures on Instagram, I always get requests for the recipe. So, I thought it'd be fun to share today's yummy soup.
Growing up my parents would make this soup and it was always my favorite, actually this year for my birthday I chose to make this soup over going out to dinner, and it's actually the only soup my husband considers a meal, win, win!
It's pretty easy to make, I generally make it in the morning and then put it in my crock pot on low for the rest of the day, you don't have to do that, it's just something I like to do.
Also, it's great as leftovers. I always have leftovers of this soup and I love eating it the next day.
Ingredients:
1 lb bacon
1/2 cube butter
1/2 cup flour
1 quart milk
1 can cream corn
2 cups grated cheese
8 potatoes
3 stalks celery
2 carrots
Directions:
Fry bacon, remove bacon from bacon grease. In bacon grease make white sauce, using 1/2 cube of butter, 1/2 cup of flour and 1 quart of milk.
When sauce is smooth add 1 can cream corn and 2 cups grated cheese.
Peel and cube potatoes. Peel carrot and slice into small pieces. Chop celery into small pieces. Cook in separate pan, when potatoes are soft, drain liquid and add to cream mixture.
Chop bacon into small pieces and add to cream mixture.
Serve and enjoy!
Would half a cube of butter be the same as half a stick?
