How to: Mini Lemon Cheesecakes - Sometimes I Cook!

Hey friends! I've never claimed to be great at cooking or baking, but, this week I volunteered to make treats for my local modern quilt guild, Red Rock Modern Quilt Guild, so I had to make some treats.

I modified this recipe from one of my mom, Kathleen Whiting's recipes and I love how it turned out. Actually I loved them so much I thought that it would be fun to share the recipe here with you!




Mini Lemon Cheesecakes
2 - 8oz pkgs cream cheese - softened
3/4 cup sugar
1 Tbsp lemon juice
1 tsp vanilla
1/8 tsp salt
2 eggs
1 can Lemon Creme pie filling
24 Vanilla Wafers
24 cupcake liners

Mix first 6 ingredients until light and fluffy.
Place 1 wafer in each muffin cup
Fill 2/3 full with filling.
Bake 350* for 20 minutes.
Cool, refrigerate over night.
Top with pie filling.
Put a small dab of cool whip on top before serving.

  2. They were so accommodating and I was truly impressed. It is such a comfortable environment. For a buffet, it was delicious food. Alcoholic beverages were also great. Overall, these venues in Houston are great, and my favorite venue in the city.
